Caprese Salad with Avocado
- 10 ounce package of cherry tomatoes, quartered
- 1 tablespoon olive oil
- sprinkle of salt, pepper, and garlic powder
- 2 tablespoons chopped fresh basil
- 8 ounce fresh mozzarella, cut into bite sized pieces
- 1 small avocado, pitted, peeled, and chopped
In a medium bowl combine tomatoes, olive oil, and spices. Add basil and mozzarella.
Right before serving add avocado and toss to coat. Serve.
